A couple of weeks ago I went to a pig roast in New York’s Hudson Valley that was everything you hope it would be: stunning food, lovely open people, a dreamy bucolic setting and beautiful sunny weather – all brought together by a warm and gracious host. Carlos Suarez is a friend and the charming restaurateur behind Rosemary’s, Bobo and Claudette,  bustling New York restaurants that invite you to eat and hang out like you are at home and amongst friends.

Being at Carlos’ get away upstate in Fishkill is no different.  As soon as you arrive you feel welcome in the sprawling, gentle landscape. Cold wine is set out on ice ready for you to pour as  you walk up the drive.  Wade Moises the chef from Rosemary’s is busy firing up the roaster with charcoal for the pig, people are hanging out around the pool, kids dart and stumble from all corners.

Everyone looks relaxed and serene as we settle in around the long, long table.  The pig is perfectly roasted and has turned a deep dark mahogany, the skin crisp and crackling.  Conversations and wine drip from our lips as day slowly turns into night and this moment of coming together becomes one of the last memories we will hold of summer…
